Marinate wild game in beer and soy sauce for tender, flavorful results. Perfect for venison, elk, and moose.
Ingredients:
  • 1 (12 fluid ounce) bottle amber beer (such as Honey Brown Lager®)
  • 0.25 cup soy sauce
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ground black pepper
  • 1 tablespoon salt
  • 1 dash hot pepper sauce, or to taste
  • 4 (3/4 pound) venison steaks
Instructions:
  • Combine beer, soy sauce, mustard, Worcestershire sauce, pepper, salt, and hot sauce in a bowl. Transfer the marinade to a resealable plastic bag. Add venison steaks, ensuring they are fully coated, then remove excess air and seal the bag. Refrigerate and marinate for 2 days.
  • Preheat a sizzling outdoor grill until hot and brush the grate with a light touch of oil. Take the steaks out of the marinade, shake off any extra, and dispose of the rest of the marinade.
  • Grill steaks until they are slightly pink in the center and register 140 degrees F (60 degrees C) on a thermometer, about 7 minutes per side. Rest steaks for 5 minutes before serving.
