Introducing Beer Mi: a zesty beer-infused meatball sub with a Vietnamese twist.
Ingredients:
  • 1/4 cup unseasoned rice vinegar
  • 1/4 cup sugar
  • 1 cup coarsely grated carrots
  • 1 cup thinly sliced cucumber
  • 1 lb ground pork
  • 1/3 cup Progresso™ plain bread crumbs
  • 1 tablespoon lager beer, such as a Boston lager
  • 1 tablespoon sriracha sauce
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1 egg, slightly beaten
  • 3/4 cup ketchup
  • 1/2 cup lager beer, such as a Boston Lager
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 baguettes (18-inches each)
  • 24 large fresh cilantro sprigs
Instructions:
  • Combine vinegar, sugar, and salt in a medium bowl. Add carrots and cucumber to marinate in the fridge until sandwich assembly.
  • Preheat oven to 375°F. Cover a 15x10x1-inch pan with foil and spray with cooking spray.
  • Mix meatball ingredients in a large bowl until thoroughly combined. Form mixture into 30 (1-inch) balls and place them in a pan.
  • Bake for 25-30 minutes or until meatballs are fully cooked through.
  • In a 3-quart saucepan, combine sauce ingredients and stir until evenly mixed. Bring to a boil over medium heat. Reduce to low heat and simmer for 5 minutes, stirring occasionally. Add hot meatballs to the sauce and mix well.
  • Slice the baguette into 3 (6-inch) pieces and split each piece in half. Spread the meatball mixture on the bottom half of each baguette, then layer with the carrot-cucumber mixture, cilantro sprigs, and top with the baguette halves.
