Wholesome baked oatmeal bursting with berries, chia seeds, and oat bran for lasting energy.
Ingredients:
  • 1.5 cups oats
  • 0.33333334326744 cup packed brown sugar
  • 0.25 cup oat bran
  • 0.25 cup chia seeds
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon dried orange peel
  • 2 cups milk
  • 3 tablespoons honey
  • 1.5 tablespoons butter, melted
  • 1.5 teaspoons vanilla extract
  • 1 cup chopped fresh strawberries
  • 1 cup fresh blueberries
Instructions:
  • Preheat oven to 375 degrees F (190 degrees C) and generously coat an 8x8-inch glass baking dish with cooking spray.
  • Combine oats, brown sugar, oat bran, chia seeds, baking powder, cinnamon, orange peel, and salt in one bowl. In another bowl, whisk together milk, eggs, honey, butter, and vanilla extract.
  • Arrange strawberries in the baking dish, sprinkle oat mixture on top, and drizzle with the milk mixture. Finish by adding a layer of fresh blueberries.
  • Bake until golden brown and cooked through, about 25 minutes in the preheated oven.
