Delicious vegan berry-filled muffins - a perfect baked delight!
Ingredients:
  • 0.5 cup Almond Breeze Vanilla almondmilk
  • 2 cups Blue Diamond Almond Flour
  • 1 tablespoon baking powder
  • 1 lemon, zested
  • 0.5 teaspoon salt
  • 0.33333334326744 cup vegan margarine, softened
  • 0.33333334326744 cup canola oil
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 0.5 cup blueberries
  • 0.5 cup raspberries
Instructions:
  • Preheat your oven to 350°F (175°C) to create the perfect cooking environment.
  • Combine the flour and baking powder in a mixing bowl. Add lemon zest and salt, and stir well.
  • Combine softened vegan margarine, canola oil, sugar, vanilla, and Almond Breeze Almondmilk Vanilla until well blended.
  • Gently incorporate blueberries and raspberries.
  • Transfer the mixture into a muffin tin and bake at 350 degrees F for about 25 minutes, or until a toothpick inserted into the center comes out clean.
