Berry lemon sago

Delicious sago pudding with fresh berries and cream - a crowd favorite!
Ingredients:
  • 1L (4 cups) milk
  • 4 x 5cm strips lemon rind
  • 100g (1/2 cup) sago
  • 80g (1/3 cup) caster sugar
  • 57.20 gm honey
  • 1 lemon, rind finely grated
  • 42.00 gm fresh lemon juice
  • 250g (1 punnet) strawberries, hulled, halved
  • 150g (1 punnet) blueberries
  • double cream or vanilla ice-cream (optional), to serve
Instructions:
  • In a saucepan, add milk and lemon rind strips. Bring to a gentle simmer over high heat. Reduce heat to low and simmer uncovered for 2 minutes. Remove and discard lemon rind using tongs.
  • Combine the sago and milk in a pot. Cook over low heat, uncovered, stirring occasionally, until the sago turns into translucent jelly-like balls, about 20-25 minutes.
  • Take the mixture off the heat, and gently mix in the sugar, honey, grated lemon rind, and lemon juice. Transfer the mixture to a large heatproof bowl and let it cool for 30 minutes.
  • Evenly distribute the sago mixture among serving glasses or bowls and chill in the fridge for at least 2 hours. Top with berries before serving and enjoy with double cream or ice cream, if desired.
