Delicious cake mix cookies that taste like birthday cake - perfect for any day! Chewy, fun, and simple to make.
Ingredients:
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting (from 16-oz container)
  • 1 egg
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 container (1.75 oz) Betty Crocker™ rainbow mix sprinkles (about 1/3 cup)
Instructions:
  • Preheat oven to 350°F.
  • In a large bowl, use an electric mixer to cream together the softened cream cheese, butter, and 1/2 cup of frosting until well blended. Scrape the sides of the bowl. Add the egg and vanilla, beat until smooth. Gradually mix in the cake mix on low speed until fully incorporated. Gently fold in 1/4 cup of sprinkles. Drop rounded tablespoonfuls of dough onto ungreased cookie sheets, spacing them 2 inches apart.
  • Bake for 11 to 14 minutes until the edges are light golden brown. Let the cookies cool on the sheet for 2 minutes, then transfer them to a cooling rack. Allow to cool completely for about 20 minutes.
  • Place the leftover 1/2 cup frosting in a small microwavable bowl and microwave on High for 5 to 10 seconds until it's melted and smooth. Drizzle the melted frosting over the tops of the cookies using a fork. Sprinkle the remaining sprinkles over the tops of the cookies and allow the frosting to set for about 1 1/2 hours. Store the cookies in an airtight container at room temperature.
