Crispy potato latkes - perfect year-round with toppings like sour cream or applesauce.
Ingredients:
  • 2 eggs
  • 1/4 cup milk
  • 1 package (20 oz) refrigerated shredded hash brown potatoes
  • 1/2 cup Original Bisquick™ mix
  • 2 tablespoons thinly sliced green onions or finely chopped onion
  • 1/2 teaspoon salt
  • 2 tablespoons butter or margarine
Instructions:
  • In a medium bowl, whisk eggs until fluffy, then mix in milk, potatoes, Bisquick, onions, and salt. In a 12-inch nonstick skillet over medium heat, melt 1 tablespoon of butter.
  • Scoop 1/4 cup of potato mixture for each pancake and form 8 mounds in the skillet. Flatten them with a spatula to make 4-inch diameter pancakes.
  • Cook the pancakes for 3 to 4 minutes on each side until they are a beautiful golden brown. Take them out of the skillet and cover to keep warm. Repeat with the remaining tablespoon of butter and potato mixture, adding more butter as necessary to prevent sticking.
