Black and orange toffee apples

Spooky and sweet toffee apples for your Halloween soiree!
Ingredients:
  • 12 medium (about 150g each) granny smith apples
  • 880g (4 cups) caster sugar
  • 250ml (1 cup) water
  • 6-8 drops orange liquid food colouring, to colour
  • 10-12 drops black liquid food colouring, to colour
  • 1 x 120g pkt black licorice (1 metre)
Instructions:
  • Prepare a baking tray lined with non-stick baking paper. Skewer or insert an ice-block stick through the core of each apple.
  • Combine half the sugar, half the water, and orange food coloring in a small heavy-based saucepan. Stir over medium-low heat until the sugar dissolves. Increase heat to medium-high and bring to a boil, occasionally brushing down the sides of the pan with a water-dipped pastry brush. Continue boiling for 6-7 minutes until a sugar thermometer reads 154°C or 'crack stage'. (If no thermometer, remove from heat, let bubbles subside, then drop a teaspoon of toffee into cold water. If it hardens, it's at crack stage.) Remove from heat and let bubbles subside. Dip apples in toffee and place on lined tray. Repeat with remaining apples. Let toffee set for 5 minutes before serving.
  • Repeat the process using the remaining sugar, water, and black/purple food coloring to create a total of six stunning black/purple toffee apples.
  • Cut the licorice into twelve 8cm strips and wrap them around the sticks where they meet the apples. Repeat for the remaining apples.
