Delicious BLT Breakfast Pizza: Eggs, bacon, and tomatoes on a pizza - perfect for brunch in just 40 minutes!
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1/4 cup cornmeal
  • 1/2 cup milk
  • 2 cups arugula
  • 1/2 cup sliced almonds
  • 1 clove garlic
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup olive oil
  • 1/2 cup crumbled cooked bacon
  • 10 grape tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 4 eggs
Instructions:
  • Preheat oven to 450°F and lightly grease a cookie sheet.
  • Combine the crust ingredients in a medium bowl until mixed. Transfer the dough to a work surface and knead briefly. Flatten the dough into a square about 1/8 to 1/4 inch thick on a cookie sheet. Use a fork to prick the surface of the dough all over.
  • Bake for 8 minutes. Let cool while preparing pesto.
  • Place arugula, almonds, garlic, and 1/3 cup Parmesan cheese in a food processor. Pulse until roughly chopped. With the processor on, pour in olive oil gradually until pesto is thickened and pureed. Spread pesto on cooked and cooled pizza crust, then top with bacon, tomatoes, and 1/4 cup Parmesan cheese.
  • Extend baking time by an additional 8 minutes.
  • Gently crack eggs one at a time into a dish, then evenly place a single egg on each corner of the pizza.
  • Continue baking for an additional 6 to 8 minutes until the eggs are cooked to your liking. Cut and serve hot.
