Decadent dip made healthy with options for extra flavor.
Ingredients:
  • 1 1/2 cups small curd creamed cottage cheese
  • 2 tablespoons milk
  • 2 teaspoons lemon juice
  • 2 teaspoons grated onion
  • 3 tablespoons crumbled blue cheese
  • 1 tablespoon chopped fresh parsley
  • 1 medium bell pepper
  • Raw vegetables, for dipping
Instructions:
  • Add all ingredients, excluding bell pepper and raw vegetables, into the blender. Blend on medium speed with intermittent stops to scrape the sides, until a smooth consistency is achieved.
  • Chill in the refrigerator for 1 hour to let the flavors meld together.
  • Prepare the bell pepper by removing the top and seeds. Fill the hollowed pepper with the dip and serve alongside fresh raw vegetables.
