Blue-cheese dip with spring vegetables

Get creative with your veggie dip and pair it with tangy blue cheese sauce.
Ingredients:
  • 1 bunch baby radishes
  • 1 bunch asparagus, woody ends trimmed
  • 1 bunch baby carrots
  • 180g snow peas, trimmed
  • 185ml white wine
  • 1 garlic clove, crushed
  • 400g mild blue cheese, crumbled
  • 5.00 gm cornflour, mixed with 2 tbsp water
  • 1/4 tsp grated nutmeg
  • Juice of 1/2 lemon
  • 20.00 ml snipped chives
  • Grissini, to serve
  • Cherry tomatoes, to serve
Instructions:
  • Prepare the vegetables by blanching them, excluding the radishes, and then immediately refreshing them under cold water. In a pan, combine the wine and garlic, and let them simmer over medium heat for 5 minutes.
  • Add the cheese and whisk until it becomes a silky smooth mixture. Slowly incorporate the cornflour mix and gently stir over low heat until it thickens slightly. Finish by adding a touch of nutmeg, a squeeze of juice, and a handful of fresh chives.
  • Arrange a platter with a variety of fresh vegetables, crispy grissini, and juicy tomatoes, alongside the flavorful dip for a delicious and colorful presentation.
