Fun and versatile smoothie bites with blueberries, grape juice, and vanilla yogurt. Perfect for creating tasty snacks in a variety of shapes.
Ingredients:
  • 2 envelopes unflavored gelatin
  • 1/2 cup cold Concord grape juice
  • 1/2 cup fresh blueberries
  • 2 containers (6 oz each) Yoplait® 99% Fat Free French vanilla yogurt
  • 3/4 cup Concord grape juice, heated to boiling
Instructions:
  • Prepare the loaf pan by lightly spraying it with cooking spray and blotting with a paper towel. Set it aside. In a large bowl, sprinkle gelatin over 1/2 cup of cold grape juice to soften and let it stand for 1 minute.
  • In a blender, combine blueberries and yogurt. Blend on high speed until smooth. Add hot grape juice to the gelatin mixture and stir for about 2 minutes until fully dissolved. Mix in the yogurt mixture, then pour the mixture into a loaf pan.
  • Chill until firm for about 4 hours. Cut into cubes and enjoy immediately, or refrigerate covered for up to 2 days before serving.
