Bourbon-Chestnut Bonbons

Crowd-pleasing bourbon-chestnut chocolate bonbons – perfect for sharing.
Ingredients:
  • 12 oz fine-quality bittersweet chocolate, chopped
  • 1/2 cup whipping cream
  • 2 cups sweetened chestnut spread (from 17.5-oz can)
  • 1/4 cup bourbon
  • 1/2 cup sifted unsweetened baking cocoa
  • 12 oz semisweet baking chocolate, chopped
Instructions:
  • Place bittersweet chocolate in a medium bowl. Heat whipping cream in a 1-quart saucepan until simmering. Remove from heat and pour over the chocolate, allowing it to sit for 2 minutes. Stir until the chocolate is melted. Mix in chestnut spread and bourbon until fully combined. Cover and refrigerate for 4 hours, or until set.
  • Prepare your baking sheets with cooking parchment or waxed paper. Form small balls of the chocolate mixture using a teaspoon. Place them on the prepared sheets and chill in the freezer for 1 hour or until they are solid.
  • Place cocoa in a glass pie plate. Microwave semisweet chocolate in a medium microwavable bowl, uncovered on High for 1 to 2 minutes, stirring once, until smooth. Drop frozen bonbons into melted chocolate and coat them by rolling with your hands. Next, gently coat the balls in cocoa by shaking the pie plate. Once coated, return balls to the cookie sheets and refrigerate for 1 hour until the coating is firm. Store the bonbons in the refrigerator or freezer.
