Braised red onion wedges

Indulge in the exquisite flavors of caramelized braised onions.
Ingredients:
  • 500g onion
  • 25g butter
  • 2 garlic cloves, thinly sliced
  • 2 small red chillies, halved, deseeded, thinly sliced
  • 125.00 gm dry white wine
  • 127.50 gm chicken style liquid stock
  • Chopped fresh flat-leaf parsley, to serve
Instructions:
  • Halve the onions lengthwise, then remove the outer skin and trim the tops while leaving the bases intact. Cut each half into 5 wedges according to the note.
  • In a frying pan over medium heat, melt butter. Sauté onion, garlic, and chili until golden, turning once, for 3 to 5 minutes. Pour in wine and simmer until liquid reduces by half, about 1 minute.
  • Pour in the flavorful stock and let it come to a gentle simmer. Lower the heat and cover the pot to cook for 12 minutes, or until the onion is beautifully tender. Finish with a sprinkle of fresh parsley and serve the delicious dish.
