Elevate your weekend breakfast with a delicious Breakfast Pizza topped with eggs, cheddar cheese, and crispy bacon.
Ingredients:
  • Vegetable oil or spray, for the baking sheet
  • 1 tablespoon corn meal, for the baking sheet
  • 1/2 recipe of No-Knead Pizza Dough left to rise overnight or 1 pound store-bought pizza dough
  • 6 slices (about 6 ounces) bacon, cut into thirds
  • 2 tablespoons olive oil
  • 3 to 4 golf-ball size tomatoes, sliced (optional)
  • 2 1/2 cups (6 ounces) loosely packed grated cheddar cheese
  • 4 large eggs
  • 2 tablespoons chopped fresh basil, parsley, or oregano (for garnish)
Instructions:
  • Preheat the oven to 450°F. Lightly oil or spray a baking sheet with vegetable oil and sprinkle with cornmeal.
  • On a floured surface, gently press the pizza dough into a 1-inch thick circle using your hands. Create dimples with your fingers to facilitate spreading, then cover the dough with a dishtowel. Allow it to rest while you cook the bacon, allowing the gluten to relax for easier shaping. If using no-knead dough and it's very wet, knead in 1 to 2 tablespoons of flour.
  • Fry the bacon in a large skillet over medium heat for 4 to 5 minutes until most of the fat has cooked off and the bacon is just starting to crisp. Drain on a paper towel-lined plate.
  • Shape the dough: Gently stretch or roll the dough into a large oval shape that matches the size of your baking sheet. Place the dough on the baking sheet, leaving some space around the edges.
  • Prepare the pizza dough: generously coat it with olive oil. Use a coffee cup to create four 3 to 4-inch spaces for the eggs. Leave these spaces empty and top the rest with tomatoes, bacon, and cheese, making sure some bacon and tomatoes are visible.
  • Bake the pizza until the dough is set and starts to brown at the edges, about 8 to 10 minutes. Remove from the oven.
  • Gently crack and place one egg onto the pizza, making sure to position it in an empty space. Repeat with the remaining eggs. Place the pizza back in the oven and bake for an additional 7 to 8 minutes, or until the egg is cooked to your liking.
  • To serve the pizza, generously sprinkle it with fragrant herbs and cut it into delicious slices. Ensure you enjoy it while it's hot and fresh.
