Decadent brownie cupcakes using cake mix - you be the judge!
Ingredients:
  • 1 (18 ounce) package brownie mix
  • 2 large eggs
  • 0.5 cup canola oil
  • 0.25 cup water
  • 1 (15.25 ounce) package white cake mix
  • 1.3333333730698 cups water
  • 3 large egg whites
  • 2 tablespoons canola oil
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 48 muffin cups by lining them with paper liners.
  • Combine brownie mix, eggs, oil, and water in a large bowl and whisk vigorously until well mixed, about 50 strokes. Set aside.
  • In a separate bowl, use an electric mixer to blend the cake mix with water, egg whites, and oil on low speed until well combined. Increase the speed to medium and beat for 2 minutes.
  • Fill each prepared muffin cup one-third full with brownie batter. Then, top the brownie batter with cake batter until each cup is two-thirds full.
  • Bake in the oven until golden brown and the tops spring back when lightly touched, approximately 20 minutes.
