Brownie Cupcakes with a Twist
Ingredients:
  • 14 tablespoons unsweetened cocoa powder
  • 0.75 cup butter, melted
  • 3 tablespoons vegetable oil
  • 2 cups white sugar
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup chopped walnuts
  • 1.5 cups finely crushed animal cracker cookies
  • 0.33333334326744 cup white sugar
Instructions:
  • Preheat the oven to 350°F (180°C) and lightly grease 24 muffin cups.
  • In a large bowl, use an electric mixer to combine cocoa powder, 3/4 cup of butter, oil, and 2 cups of sugar until smooth. Add eggs one at a time, ensuring each is fully blended before adding the next. Mix in vanilla extract with the last egg. Gently incorporate the flour mixture into the egg mixture. Carefully fold in walnuts until evenly combined.
  • In a bowl, mix animal cracker crumbs, 1/3 cup sugar, and 6 tablespoons butter until well blended. Press the cracker mixture into the bottom of each muffin cup. Fill the muffin cups 3/4 full with the brownie mixture.
  • Bake in a preheated oven until a toothpick inserted in the center comes out clean, which should take 25 to 35 minutes.
