Buttery lemon-pepper tilapia over coconut rice - a delicious meal for two in a flash!
Ingredients:
  • 1 cup long-grain rice
  • 2 cups coconut milk
  • salt and ground black pepper to taste
  • 2 (5 ounce) fillets tilapia
  • 1 pinch lemon-pepper seasoning, or to taste
  • 1 stick salted butter
Instructions:
  • Preheat the oven to 400°F (200°C) to create the perfect baking environment.
  • In a large skillet over medium heat, warm oil. Stir in rice and toast for 2 to 3 minutes. Pour in coconut milk, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer until rice is tender and liquid is absorbed, about 15 minutes.
  • Season both sides of the tilapia fillets generously with zesty lemon-pepper seasoning. Arrange the fillets in a glass pan and top each one with a delicious half of butter.
  • Bake in the preheated oven until the butter is fully melted and bubbling, for 5 to 7 minutes. Drizzle the melted butter over the fish and lower the oven temperature to 330°F (165°C).
  • Continue baking the fish in the preheated oven until it is almost cooked through, about 3 to 5 minutes. Then, increase the oven temperature to 400 degrees F (200 degrees C) and bake until the edges turn golden brown. Serve alongside some rice.
