Easy Italian-inspired cake mix cookies, twice-baked for extra flavor.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1 tablespoon vegetable oil
  • 2 eggs
  • 2 tablespoons grated lemon peel
  • 1 tablespoon grated lime peel
  • 1 tablespoon grated orange peel
  • 1/4 cup from 1 box (16 oz) Betty Crocker™ Rich & Creamy Lemon Frosting
  • 2 to 4 teaspoons lemon juice
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pan). Lightly grease a large cookie sheet. Combine biscotti ingredients in a large bowl and mix until dough forms.
  • Shape the dough into a 14x3-inch rectangle, 1/2 inch thick on a cookie sheet. Bake for 19 to 25 minutes until golden brown. Allow it to cool on the cookie sheet on a cooling rack for 15 minutes.
  • Slice the dough into 1/2-inch pieces and place them cut side up on a baking sheet. Bake for 7 to 8 minutes until the bottoms are lightly golden, then flip the slices and bake for an additional 7 to 8 minutes. Let cool for 5 minutes before transferring to a cooling rack. Allow to cool completely for about 15 minutes.
  • Mix glaze ingredients in a small bowl until thin enough to drizzle over biscotti. Allow biscotti to stand for about 4 hours or until glaze is set before stacking. Store loosely covered.
