Caramel mandarins with cranberries

Elevate your Christmas ham with a tangy mandarin and cranberry topping.
Ingredients:
  • 660g caster sugar
  • 60ml liqueur
  • 8 small mandarins (see notes), peeled, white pith removed
  • 150g cranberry
Instructions:
  • In a saucepan over gentle heat, combine sugar with 3 cups (750ml) water. Stir and cook until the sugar completely dissolves, approximately 3-4 minutes. Gently introduce the liqueur and mandarins.
  • Take the pan off the heat and let it cool for a bit. Pour the mandarins and syrup into a bowl, cover it, and leave it at room temperature overnight.
  • Set aside the mandarins. Pour the syrup back into a saucepan over medium-high heat and bring to a boil. Reduce heat to medium and simmer for 6-8 minutes until it reduces to 1 cup (250ml).
  • Toss in cranberries and cook for 3-4 minutes until they burst. Drizzle syrup over mandarins and serve warm or at room temperature with your Christmas ham.
