Caramelised onion and beef pies

Budget-friendly, nutritious beef pies with crispy puff pastry - a kid-friendly midweek dinner favorite.
Ingredients:
  • 600g beef rump steak, thinly sliced
  • 40.00 ml balsamic vinegar
  • 510.00 gm beef stock
  • 500g orange sweet potato, peeled, cut into 1cm pieces
  • 5.00 gm cornflour
  • 130g salsa
  • 2 sheets frozen ready-rolled puff pastry, partially thawed
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 220°C (200°C for fan-forced ovens) and line a baking tray with parchment paper.
  • In a hot frying pan, sear half of the beef in 1 tablespoon of oil until browned, for about 3 to 4 minutes. Remove beef from the pan and repeat with the remaining beef and oil.
  • Pour vinegar and stock into the pan and bring it to a boil. Lower the heat to medium-low. Add sweet potato and beef, then let it simmer for 15 minutes until the sweet potato is tender. In a jug, mix cornflour with 2 tablespoons of cold water, then slowly add it to the beef mixture. Let it simmer for 1 minute until it thickens slightly. Finally, stir in the salsa.
  • Cut 2 pastry rounds per sheet using the ramekin tops as a guide. Place them on a tray and bake for 10 minutes until puffed and golden.
  • Divide the beef mixture evenly among four 1-cup ramekins. Cover each ramekin with pastry rounds and enjoy with a side salad.
