Muffins: the ideal anytime snack!
Ingredients:
  • 30g butter
  • 3 small brown onions, halved, thinly sliced
  • 20.00 ml fresh thyme leaves
  • 375.00 gm self-raising flour
  • 321.88 gm milk
  • 1 egg, lightly beaten
  • 90g butter, melted
  • 2.40 gm salt
Instructions:
  • In a large frying pan over medium heat, melt butter until sizzling. Add onion and cook, stirring frequently, until golden and caramelized, about 10 minutes. Stir in thyme and then remove from heat.
  • Preheat your oven to 180°C and lightly grease a 12-hole non-stick muffin pan with 1/3-cup capacity.
  • Prepare basic muffin mix: In a large bowl, sift flour. Add salt and onion mix, then create a well in the center. In a jug, mix milk, egg, and butter together. Pour the milk mixture into the well. Gently stir with a large metal spoon until just combined (avoid over-mixing).
  • Fill muffin holes three-quarters full with the mixture and bake for 20 minutes or until a skewer inserted into the center comes out clean. Let cool in the pan for 1 minute, then transfer to a wire rack to cool.
