Cheesy caramelized onion French bread bites - a flavorful, quick appetizer!
Ingredients:
  • 2 tablespoons olive or vegetable oil
  • 2 medium sweet onions, thinly sliced (about 2 cups)
  • 1 teaspoon salt
  • 1 tablespoon packed brown sugar
  • 1 tablespoon balsamic vinegar
  • 24 slices (1/4-inch thick) French bread baguette
  • Nonstick cooking spray
  • 1 package (4 oz) chèvre (goat) cheese, softened
  • 1 package (3 oz) cream cheese, softened
  • 1 teaspoon chopped fresh thyme or oregano leaves
Instructions:
  • In a 12-inch nonstick skillet, heat oil over medium-high heat and sauté onions for 10 minutes, stirring occasionally.
  • Lower the heat to medium-low. Add in the salt, brown sugar, and vinegar. Continue cooking for 30 to 35 minutes, stirring every 5 minutes, until the onions turn a deep golden brown (they will shrink as they cook). Let it cool slightly before serving.
  • Preheat oven to 325°F. Arrange bread slices on a baking sheet, lightly coat with non-stick cooking spray, and bake for 6 to 9 minutes until crispy.
  • In a small bowl, mix together the goat cheese and cream cheese until smooth; set aside.
  • Spread a luxurious layer of caramelized onions on each slice of bread, followed by a generous spoonful of the delectable cheese mixture. Finish off with a sprinkle of fragrant herbs for the perfect finishing touch.
