Quick and easy caramelized onion and jalapeño quesadillas - a versatile dish perfect for any meal with optional meat.
Ingredients:
  • 1 tablespoon butter
  • 1 large onion, chopped
  • 2 jalapeno peppers, chopped
  • 2 tablespoons vegetable oil, or as needed
  • 4 (10 inch) flour tortillas
  • 1 cup shredded Mexican cheese blend
Instructions:
  • In a large skillet over medium-low heat, melt butter until bubbling. Add onion and sauté until golden brown for about 10 minutes. Mix in jalapeño peppers and continue to cook for another 10 minutes until fragrant. Transfer the flavorful mixture to a plate.
  • In the same skillet, heat 1 tablespoon of oil. Place one tortilla in the skillet, layer with 1/4 cup of cheese, half of the onion mixture, and another 1/4 cup of cheese. Top with another tortilla. Cook the quesadilla until golden brown and the cheese is melted, about 1 to 2 minutes per side. Transfer to a plate, add more oil to the skillet, and repeat the process to make the second quesadilla.
