Indulgent caramelized onion dip with smoky bacon.
Ingredients:
  • 1-1/4 pounds sweet onions (such as Vidalia), halved and sliced 1/4-inch thick
  • 2 tablespoons canola oil
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 4 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/3 cup plain Greek yogurt (such as Fage® Total 2%)
  • 2 teaspoons balsamic vinegar
  • 3 strips bacon, crisp and crumbled
  • salt and freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)
Instructions:
  • Heat oil and butter in a large nonstick skillet over medium heat. Add onions, sprinkle with 1/2 teaspoon salt, and cook until soft and translucent, around 10 minutes.
  • Lower the heat to medium-low and cook the onions, stirring occasionally, until they turn a beautiful golden brown color, around 40 to 50 minutes. If the pan seems dry, lower the heat and add 1 tablespoon of water. Allow the onions to cool down to room temperature.
  • In a large skillet over medium-high heat, cook the bacon until crisp, about 10 minutes. Place the cooked bacon on paper towels to drain, then crumble once it is cool enough to handle.
  • Combine cream cheese, mayonnaise, sour cream, and yogurt in a large bowl. Use an electric mixer to achieve a smooth consistency. Fold in balsamic vinegar and bacon, then season with salt and pepper to taste.
  • Incorporate caramelized onions throughout the dip. Chill for at least 1 hour, preferably overnight. Top with fresh chopped parsley before serving.
