Whip up a quick and refreshing watermelon salad with feta, mint, and high-quality olive oil for a burst of sweet and salty flavors. Don't hold back on the good feta cheese for the best results.
Ingredients:
  • 1 small watermelon (about 3 pounds), cut into 1-inch cubes and chilled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon freshly grated lemon peel
  • 1/2 teaspoon kosher salt
  • freshly ground black pepper to taste
  • 4 ounces feta cheese, coarsely crumbled
  • 1/4 cup chopped fresh mint leaves
Instructions:
  • Add the chilled watermelon cubes to a spacious bowl.
  • Combine the olive oil, lemon juice, lemon zest, kosher salt, and black pepper in a small bowl and whisk until well blended.
  • Before serving, generously drizzle the dressing over the chilled watermelon and delicately toss. Sprinkle the feta cheese and fresh mint on top without stirring. Enjoy immediately.
