Transform Bisquick® cheesy bread into a delicious breakfast grilled sandwich with scrambled eggs, Cheddar cheese, and spinach.
Ingredients:
  • 3 3/4 cups Original Bisquick™ mix
  • 3/4 cup shredded sharp Cheddar cheese (3 oz)
  • 1 1/2 cups milk
  • 1/4 teaspoon ground red pepper (cayenne)
  • 7 eggs
  • 1/4 cup whipping cream or milk
  • 2 teaspoons butter
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 slices (3/4 oz each) Cheddar cheese
  • Olive oil cooking spray
  • 1 cup loosely packed fresh baby spinach leaves
Instructions:
  • Preheat oven to 350°F and grease an 8x4-inch loaf pan. In a medium bowl, combine Bisquick mix and 3/4 cup cheese. Mix in milk, red pepper, and 1 egg until well combined. Pour the mixture into the pan and bake for 50 minutes, or until a toothpick inserted in the center comes out clean. Allow it to cool completely for at least 1 hour and 30 minutes before serving.
  • Whisk together 6 eggs and whipping cream in a medium bowl. Melt butter in a 10-inch nonstick skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until nearly cooked. Season with salt and black pepper, then remove from heat.
  • Preheat contact grill for 5 minutes. Slice loaf diagonally into 8 (1/2-inch) slices. Layer 1 cheese slice on 4 slices of bread, top with scrambled eggs, and another cheese slice. Top with remaining bread slices. Spray tops with cooking spray. Grill sandwiches until bread is toasted and cheese is melted, about 2 to 3 minutes. Add spinach to each sandwich before serving. Cut each sandwich in half to serve.
