Cheese Grits

Enjoy a comforting Southern breakfast classic with hot, buttered grits. Optional: add cheese for extra flavor.
Ingredients:
  • 2 cups milk
  • 2 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup uncooked quick-cooking corn grits
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
  • 2 medium green onions, sliced (2 tablespoons)
  • 2 large eggs, slightly beaten
  • 1 tablespoon butter or margarine
  • 1/4 teaspoon paprika
Instructions:
  • Preheat oven to 350°F and generously coat a 1 1/2-quart casserole dish with cooking spray.
  • In a 2-quart saucepan, bring a mixture of milk, water, salt, and pepper to a boil. Slowly stir in grits while reducing heat. Cook uncovered for about 5 minutes, stirring often, until thickened. Add cheese and onions, and mix well.
  • Combine 1 cup of the grits mixture with eggs, then fold back into the remaining grits in the pot. Transfer to a casserole dish. Dot with butter pieces and sprinkle with paprika.
  • Bake without cover for 35-40 minutes until fully cooked. Allow it to rest for 10 minutes before serving.
