Cheeseburger' tray bake recipe

One-pan loaded patty dinner with chips and salad, no bun needed.
Ingredients:
  • 500g desiree potatoes, scrubbed, cut into 1cm-thick batons
  • 27.30 gm extra virgin olive oil
  • 500g lean beef mince
  • 25g (1 ⁄4 cup) quinoa flakes
  • 1 bunch fresh chives, finely chopped
  • 2 garlic cloves, crushed
  • 3 teapsoons gluten-free Dijon mustard
  • 1 truss tomato, thinly sliced
  • 1 small red onion, thinly sliced into rings
  • 25g (1 ⁄3 cup) grated cheddar
  • 18.80 gm light sour cream
  • 1 tsp apple cider vinegar
  • 1 baby cos lettuce, quartered
  • Gherkins, to serve
Instructions:
  • Preheat your oven to 220C/200C fan forced. Line a large baking tray with baking paper. Rinse the potato under cold water, then transfer it to a microwave-safe bowl, cover, and microwave on High for 4-5 minutes until just tender. Let it drain in a colander.
  • Spread the potatoes evenly on the tray, drizzle with 1 tablespoon of oil, season with your favorite seasonings, toss to coat well, roast in the oven for 15 minutes or until they are golden and crisp. Push the chips to one side of the tray.
  • In a bowl, mix together beef, quinoa flakes, chives, egg, garlic, 2 tsp of mustard, and season with salt and pepper. Combine well, then shape the mixture into four 2cm-thick patties.
  • In a non-stick frying pan over medium-high heat, heat the remaining oil. Cook the patties for 8 minutes, flipping once, until nicely browned. Arrange the patties on a tray next to the chips. Top with tomato, onion, and cheese. Bake for 8 minutes until the cheese melts and the patties are fully cooked.
  • In a small bowl, mix together the sour cream, vinegar, and remaining mustard. Season to taste. Serve the loaded patties and chips with lettuce wedges, sour cream sauce, and gherkins.
