Cheeseburger cob dip

Elevate classic cob loaf dip with cheesy beef mince twist.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2 garlic cloves, crushed
  • 1 white onion, trimmed, finely chopped
  • 350g beef mince
  • 130.00 gm tomato sauce
  • 141.25 gm barbecue sauce
  • 48.80 gm Worcestershire sauce
  • 23.40 gm American mustard
  • 4 gherkins
  • 125g cream cheese, softened
  • 42.40 gm thousand island dressing
  • 1 large white sesame seed cob loaf
  • 4 tasty cheese slices
  • 1 large tomato, seeded, diced
  • Cooked French fries, to serve
  • Gem lettuce leaves, to serve
  • Quartered baby cucumbers, to serve
Instructions:
  • 1. In a large frying pan over medium-high heat, sauté garlic and 3/4 of the onion until softened, about 2 minutes. 2. Add the mince and cook for 6 to 8 minutes, breaking up lumps with a wooden spoon until browned. 3. Stir in tomato, barbecue sauce, Worchesterhire sauce, and mustard. 4. Finely chop 2 gherkins and add to the mince mixture. 5. Bring to a boil, then reduce heat to low and simmer for 15 minutes or until thickened, stirring occasionally.
  • In a bowl, cream together the smooth cream cheese and thousand island dressing until fully combined.
  • Preheat your oven to 180C/160C fan-forced. Line a baking tray with baking paper. Slice off the top of the cob loaf by 4cm. Carefully hollow out the center, leaving a sturdy crust. Cut the removed bread and the top into large cubes. Place the cob and bread cubes on the lined tray.
  • Layer 1/3 of the mince mixture into the cob, spreading it evenly. Place 1 1/2 slices of cheese on top. Spread 1/3 of the cream cheese mixture over the cheese. Repeat this process to create two more layers, using half of the mince and cream cheese mixtures for each layer. Finish with the remaining slice of cheese on top. Bake for 20 to 25 minutes until hot and bubbly. Let it stand for 5 minutes before serving.
  • Thinly slice the rest of the gherkins and combine them with the tomato and the remaining onion in a bowl. Season to taste.
  • Drizzle the flavorful tomato mixture generously on top of the corn cob. Accompany with crispy toasted bread cubes, golden French fries, and a refreshing side of crisp lettuce and fresh cucumber.
