Cheeseburger-inspired egg roll, golden and crispy.
Ingredients:
  • 1 cup chopped dill pickles or sweet pickles
  • 1 cup shredded Cheddar cheese
  • 1 tablespoon prepared yellow mustard, or to taste
  • 1 (16 ounce) package egg roll wrappers
  • 1 cup vegetable oil for frying
Instructions:
  • In a skillet over medium heat, sauté the ground beef and onion for 10 minutes, breaking up the beef as it cooks. Drain and transfer to a bowl. Mix in the pickles, cheese, and mustard until well combined.
  • Prepare a baking sheet with parchment paper. Keep a bowl of water nearby. Take one egg roll wrapper from the stack and cover the rest with a damp paper towel to keep them moist.
  • Lay the wrapper diagonally on your work surface. Spoon 1/4 cup of filling onto the wrapper, then fold the top corner over the filling. Roll the wrapper tightly into a cylinder, tucking in the corners as you go until the filling is completely wrapped. Dampen the last corner with water to seal the egg roll tightly, ensuring no filling escapes. Keep filled egg rolls on a parchment-lined baking sheet under a damp paper towel as you prepare the remaining rolls.
  • Heat the oil in a deep saucepan or deep fryer to 365°F (185°C). Fry 2-3 egg rolls at a time for 4-5 minutes, flipping once, until golden brown. Use tongs to remove the egg rolls and place them on paper towels to drain.
