Cheeseburger meatloaf stuffed with Cheddar or customizable with sautéed onions and mushrooms.
Ingredients:
  • 2 pounds ground beef
  • 0.75 cup fresh bread crumbs
  • 0.5 cup minced onion
  • 2 large eggs, beaten
  • 1.5 teaspoons salt
  • 1.5 teaspoons ground black pepper
  • 3 cups shredded Cheddar cheese
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • In a large bowl, thoroughly mix together the beef, bread crumbs, onion, eggs, salt, and pepper. Form the meat mixture into a 14x18-inch rectangle on a sheet of wax paper.
  • Spread a generous layer of cheese over the meat, making sure to leave a 3/4 inch border along the edges. Roll the meat up like a jelly-roll to enclose the filling and create a beautiful pinwheel loaf. Gently press the ends to seal in the cheese. Transfer the meatloaf to a 10x15-inch baking dish.
  • Bake in the preheated oven for 1 hour, or until an instant-read thermometer inserted into the center reads at least 160°F (70°C).
