Budget-friendly bacon cheeseburger Beef Wellington for impressive entertaining.
Ingredients:
  • 6 ounces frozen puff pastry
  • 1 slice bacon, cut in half
  • 8 ounces ground beef
  • salt and freshly ground black pepper to taste
  • cayenne pepper to taste
  • 0.5 ounce sharp Cheddar cheese
  • 1 large egg
Instructions:
  • Assemble all ingredients.
  • In a large skillet, lay out the bacon strips, then cook over medium-high heat, flipping occasionally, until perfectly browned, for about 10 minutes. Place cooked bacon on paper towels to drain. Discard excess fat from the skillet and give it a quick wipe, but leave some flavor behind.
  • Form ground beef into a thick patty, about 1 inch by 4 1/4 inches wide. Season generously with salt, pepper, and cayenne. Sear the burger on high heat in a skillet for 2 minutes on each side. Place the burger on a plate and chill in the refrigerator.
  • Take out a sheet of Dufour Puff Pastry from the freezer, and roll it to 1/8 inch thickness. Cut out a 5 1/4 to 5 1/2-inch circle for the base and a 7 1/4 to 7 1/2-inch circle for the top. Transfer the circles onto a sheet pan and freeze until firm.
  • Make a small vent hole in the center of the top piece and gently score the pastry surface with a knife without cutting completely through. Refrigerate the top piece to keep it cold.
  • Remove the bottom pastry from the freezer and layer with the burger, bacon, and cheese. Mix an egg with 1 teaspoon of water and brush the edges. Add the top pastry over the fillings, then press the edges firmly to seal. Roll the bottom edge over the pastry to seal completely. Chill in the fridge for about 20 minutes before baking.
  • Preheat the oven to 450 degrees F (230 degrees C), then use a fork to create a decorative edge on the pastry and brush the top with an egg wash.
  • Bake in the preheated oven for 20-22 minutes until beautifully golden brown. Let cool on a rack for 5 minutes before serving.
