Slowly caramelize onions, creating maximum sweetness in Gruyere cheese and bacon hand pies.
Ingredients:
  • 3 tablespoons unsalted butter, divided
  • 0.5 (8 ounce) package white button mushrooms, sliced
  • 2 large yellow onions, halved and thinly sliced
  • 2 slices crisp cooked bacon, crumbled
  • 1 teaspoon maple syrup
  • 0.5 teaspoon dried thyme
  • 2 (9 inch) unbaked pie crusts
  • 1 tablespoon milk
  • 0.66666668653488 cup shredded Gruyere cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking sheet with parchment paper.
  • In a large skillet, melt 1 tablespoon of butter until sizzling. Add the mushrooms and saute until caramelized and tender, approximately 5 minutes. Set aside the delicious mushrooms for later use.
  • In the same skillet, melt the remaining butter over low heat. Add sliced onions and cook uncovered until they turn golden brown and the liquid evaporates, about 30-35 minutes. Stir occasionally to avoid burning.
  • Add the mushrooms back to the skillet and combine with the bacon, balsamic vinegar, maple syrup, thyme, salt, and pepper. Cook for an additional 3 minutes. Allow the mixture to cool slightly.
  • Roll out pie crusts on a lightly floured surface. Cut each crust into three 5-inch rounds. Whisk together egg and milk in a small bowl; gently brush around the edge of each round.
  • Evenly distribute the onion mixture among the 6 rounds, placing it at the center. Add Gruyere cheese on top. Fold the dough in half, forming a semi-circle, then press and crimp the edges with a fork to seal.
  • Make 2 small slits in each hand pie to allow steam to escape, then brush the tops with the remaining egg wash if preferred. Place the pies on the baking sheet.
  • Bake in the preheated oven for 20 minutes until golden brown and cooked through. Serve hot or at room temperature after removing from the baking sheet.
