Savory sausage and zucchini casserole packed with fresh veggies, rice, and oregano for a flavorful twist.
Ingredients:
  • 1 cup water
  • 0.5 cup uncooked white rice
  • 1 pound pork sausage
  • 0.25 cup chopped onion
  • 4 cups cubed zucchini squash
  • 1 cup diced fresh tomato
  • 2 (4 ounce) cans sliced mushrooms, drained
  • 1 (8 ounce) package processed cheese food, cubed
  • 1 pinch dried oregano
  • salt and pepper to taste
Instructions:
  • In a small saucepan, simmer rice in water until tender, about 20 minutes. Let it sit and set aside after removing from heat.
  • Preheat the oven to 325°F (165°C) to create the perfect cooking environment for your dish.
  • In a large skillet over medium heat, perfectly brown sausage and onion, ensuring to stir consistently. Remove any excess grease. Add zucchini and tomatoes, cook until tender. Mix in cooked rice, mushrooms, and cheese. Season with oregano, salt, and pepper. Transfer the mixture into a 9x13-inch baking dish.
  • Place in the preheated oven, uncovered, until golden brown and bubbly, approximately 1 hour.
