Cheesy Taco Potato Puff Casserole

Cheesy taco casserole with potato puffs, zesty tomatoes, and taco seasoning, topped with shredded cheese.
Ingredients:
  • PAM® Original No-Stick Cooking Spray
  • 0.5 (28 ounce) package Alexia® Crispy Seasoned Potato Puffs
  • 1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
  • 1 tablespoon taco seasoning mix
  • 1 cup shredded Mexican blend cheese
Instructions:
  • Preheat the oven to 425°F.
  • Grease an 8x8-inch glass baking dish with cooking spray. Add potato puffs and drained tomatoes to the dish. Sprinkle evenly with taco seasoning and toss to combine.
  • Bake for 25 minutes or until the potatoes are golden brown and crisp, gently flipping them halfway through. Once done, take them out of the oven and sprinkle with cheese.
