Try this irresistible chicken pasta dish for a speedy go-to dinner option!
Ingredients:
  • 36.40 gm olive oil
  • 3 chicken breast fillets, fat trimmed
  • 400g casarecce pasta
  • 500g cherry tomatoes, halved
  • 166.65 gm cream
  • 60g parmesan cheese, shaved, to serve
  • 375.00 ml firmly-packed basil leaves
  • 125.00 ml pine nuts
  • 2 garlic cloves, roughly chopped
  • 113.75 gm extra virgin olive oil
  • 60g parmesan cheese, finely grated
Instructions:
  • In a large non-stick frying pan over medium-high heat, warm 1 tablespoon of oil. Season chicken with salt and pepper, then place it in the pan. Cook for 5 minutes on each side until fully cooked. Remove chicken from the pan and cover with foil to keep warm.
  • Boil pasta in a large pot of salted water according to package instructions until al dente. Drain and return to pot.
  • Heat the remaining oil in a frying pan over high heat. Add the tomatoes and cook, tossing often, for 3 minutes or until just tender.
  • Create delicious pesto by combining fresh basil, pine nuts, and garlic in a food processor. Blend until almost smooth, scraping down the sides as needed. While the processor is running, slowly pour in the oil until fully combined. Transfer the pesto to a bowl and mix in the parmesan. Season with salt and pepper, stirring until well blended.
  • Slice the chicken thinly and combine it with 2/3 cup of basil pesto, cream, and chicken in the pasta. Toss everything over low heat until well mixed. Lastly, add tomatoes and season with salt and pepper, gently tossing to combine.
  • Serve the pasta in bowls, generously sprinkling with Parmesan cheese before enjoying.
