Chicken and Veggie Pizza

Creamy spinach dip adds a delicious twist to a simple cheesy chicken pizza.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1/3 cup very hot water
  • 3/4 cup spinach dip
  • 1 cup chopped cooked chicken
  • 1 medium tomato, seeded and chopped (3/4 cup)
  • 1 package (8 oz) sliced fresh mushrooms
  • 1 1/2 cups shredded mozzarella cheese (6 oz)
Instructions:
  • Preheat your oven to 450°F and move the oven rack to the lowest position. Then, generously spray a 12-inch pizza pan with cooking spray.
  • Combine Bisquick mix, hot water, and 1/4 cup of spinach dip in a medium bowl. Stir with a fork until a soft dough forms, then beat vigorously for 20 strokes. Press the dough into a pizza pan using your fingers dipped in Bisquick mix, pinching the edges to form a 1/2-inch rim. Bake for 7 minutes.
  • Spread the remaining 1/2 cup of spinach dip over the partially baked crust, then top it with chicken, tomato, and mushrooms. Finish by sprinkling cheese over the top.
  • Bake until the crust is golden brown and the cheese is melted, about 12 to 15 minutes.
