Cozy up with this comforting chicken apple sausage dish, featuring savory sausage, cabbage, and potatoes - a timeless and satisfying meal for any season!
Ingredients:
  • 1.5 teaspoons butter
  • 1 teaspoon olive oil
  • 4 links chicken and apple sausage
  • 1 medium onion, sliced
  • salt and freshly ground black pepper to taste
  • 3 cloves garlic, crushed
  • 3 cups apple cider
  • 1 pound small Yukon Gold potatoes, scrubbed but not peeled
  • 1.5 pounds finely shredded green cabbage
  • 2 tablespoons Dijon mustard, for garnish
  • 2 tablespoons chopped fresh parsley, for garnish
Instructions:
  • In a Dutch oven over medium heat, melt the butter with olive oil. Add in the sausage links and cook until browned on all sides, which should take about 6 to 8 minutes.
  • Add onions and season generously with salt and pepper. Sauté until onions are soft, slightly translucent, and caramelized, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds.
  • Increase heat to medium-high, pour in apple cider, and stir in potatoes until simmering. Add cabbage to the sausage mixture, reduce heat to medium-low, cover, and simmer until potatoes are tender, about 20 to 25 minutes. Transfer sausage links and potatoes to a plate.
  • Bring the heat to high and let the liquid thicken and reduce by half, around 5 minutes. Put back the sausage links and potatoes. Take the pot off the heat and season with salt and pepper.
  • Enhance each serving with a flavorful and vibrant finish of mustard and parsley.
