Delicious dish made with just 6 ingredients.
Ingredients:
  • 1 bunch asparagus, cut into thirds
  • Vegetable oil, for shallow frying (see note)
  • 500g crumbed chicken schnitzel
  • 120g baby rocket
  • 1 large avocado, chopped
  • 62.50 ml shaved parmesan
  • 87.45 gm ranch dressing
Instructions:
  • Place asparagus in a heatproof bowl and cover with boiling water. Let it sit for 3 minutes until bright green and tender. Then, rinse the asparagus under cold water and drain.
  • Heat a generous amount of oil in a large frying pan over medium-high heat, around 5mm deep. Cook chicken in batches for about 3 minutes on each side, or until fully cooked. Place on a paper towel-lined plate to drain excess oil, then slice for serving.
  • Combine rocket, asparagus, avocado, parmesan, schnitzel, and dressing in a large bowl. Toss well to mix. Season to taste and enjoy!
