Tender chicken coated in a delicious fig sauce, combining sweet and savory flavors with garlic, shallot, red wine, and balsamic vinegar for a touch of tang.
Ingredients:
  • 1 pound chicken tenders
  • salt and ground black pepper to taste
  • 0.25 cup all-purpose flour
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 0.5 cup red wine
  • 0.25 cup balsamic vinegar
  • 4 fresh figs, cut into 1/2-inch pieces
  • 1 teaspoon minced fresh thyme leaves
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon butter
Instructions:
  • Season the chicken generously with a sprinkle of salt and pepper on each side, followed by a light dusting of flour, shaking off any extra.
  • In a large nonstick skillet over medium heat, melt butter with olive oil. Cook chicken until golden brown, cooked through, and tender, about 5 to 6 minutes, remember to flip halfway through. Place on a plate and loosely cover with aluminum foil to retain warmth.
  • Prepare the sauce: Sauté shallot and garlic in a skillet until softened for 2 minutes. Pour in red wine and balsamic vinegar; simmer until reduced by half, 3 to 5 minutes. Mix in figs, thyme, mustard, honey, and salt; bring to a boil. Lower the heat and simmer until thickened for about 3 minutes. Remove from heat and stir in butter.
  • Drizzle the flavorful sauce over the tender chicken pieces, or return chicken to the skillet for a quick warm-up. Serve promptly to enjoy the delicious dish at its best.
