Delicious afternoon banana loaf treat.
Ingredients:
  • 50g butter, softened
  • 215.00 gm caster sugar
  • 2 large bananas, mashed (1 cup)
  • 225.00 gm self-raising flour
  • 1.25 gm cinnamon
  • 20.60 gm milk
  • 100g Dark Baking Chocolate, chopped
  • 82.50 ml pecan nut halves, chopped
  • 1 tsp cinnamon sugar
Instructions:
  • Blend the butter, sugar, and egg until smooth. Mix in the banana. Fold in the sifted flour and cinnamon along with the milk until well combined. Gently incorporate the chocolate.
  • Transfer the mixture into a prepared 22cm × 12cm loaf pan and generously sprinkle with nuts.
  • Preheat your oven to 180°C and bake for 50 minutes or until cooked through. After baking, sprinkle with fragrant cinnamon sugar. Let it cool for 10 minutes, then transfer onto a wire rack to cool completely.
