Decadent chocolate chip banana bread with walnuts, makes two moist loaves.
Ingredients:
  • 1 cup shortening
  • 2 cups white sugar
  • 2 eggs
  • 2 tablespoons mayonnaise
  • 6 very ripe bananas, mashed
  • 3 cups all-purpose flour
  • 0.5 teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease two 9x5-inch loaf pans.
  • In a large bowl, beat shortening and sugar until fluffy. Add eggs one at a time, mixing well after each. Mix in mayonnaise and bananas. In a separate bowl, combine flour, salt, baking powder, and baking soda. Gently fold flour mixture into banana mixture until just combined. Fold in chocolate chips and walnuts.
  • Bake the loaf in the preheated oven until a toothpick inserted into the center comes out clean, for about 50 to 75 minutes. Allow the loaves to cool in the pans for 20 minutes before transferring them to a wire rack to cool completely.
