Indulgent chocolate chip cookies bursting with sweet cherries, rich chocolate chips, nutty pecans, and a hint of savory sea salt.
Ingredients:
  • 1.3333333730698 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 0.5 cup light brown sugar
  • 0.25 cup white sugar
  • 0.25 cup unsalted butter, softened
  • 0.25 cup shortening
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon molasses
  • 0.75 cup dark chocolate chips
  • 0.5 cup dried cherries
  • 0.5 cup chopped pecans
  • 1 pinch coarse sea salt
Instructions:
  • Combine the flour, cornstarch, baking soda, and salt in a medium bowl, whisking until well mixed.
  • In a large bowl, cream together brown sugar, white sugar, butter, and shortening until fluffy using an electric mixer. Mix in egg, vanilla extract, and molasses on low speed. Slowly incorporate flour mixture until just combined. Gently fold in chocolate chips, cherries, and pecans using a wooden spoon. Cover and refrigerate for at least 2 hours until well chilled.
  • Preheat your oven to 350 degrees F (175 degrees C) and line 2 cookie sheets with parchment paper or silicone mats.
  • Shape dough into adorable 1/4-cup-sized balls and arrange them 2 inches apart on baking sheets.
  • Bake in the preheated oven for 12 to 14 minutes until cookies are golden brown on the edges and slightly underdone in the middles. Sprinkle with sea salt immediately after removing from the oven. Allow cookies to cool on the baking sheet for 5 minutes to finish cooking before transferring to a wire rack to cool completely.
