Chocolate microwave pudding

Use microwave for quick and delicious chocolate puddings when oven is occupied.
Ingredients:
  • Melted butter, for greasing
  • 100g (1/2 cup, firmly packed) brown sugar
  • 150g (1 cup) self-raising flour
  • 40.00 gm cocoa powder (like Nestle Baking Cocoa)
  • 185mls (3/4 cup) thin cream
  • 50g (2 1/2 tbsp) butter, melted
  • Icing sugar, for dusting
  • Whipped cream, to serve
  • 150g (3/4 cup, firmly packed) brown sugar
  • 375mls (1 1/2 cups) boiling water
Instructions:
  • Grease an 8cm deep, 20cm diameter heat-resistant dish with melted butter.
  • In a medium mixing bowl, gently place the sugar. Sift the flour and cocoa over the sugar, then stir everything together until combined.
  • Mix together the cream and butter, then incorporate into the dry ingredients until a smooth batter forms. Transfer the batter into the greased dish and level the top.
  • Combine the brown sugar and cocoa in a bowl to make the sauce. Sprinkle the mixture evenly over the batter, then pour the boiling water gently over the back of a large metal spoon to evenly cover the batter.
  • Place a sheet of non-stick baking paper on the microwave turntable. Cook the dish uncovered for 13-15 minutes on Medium/500watts/50%. Once done, loosely cover with foil and let it stand for 5-10 minutes before serving.
  • Sprinkle with powdered sugar and enjoy warm with a dollop of cream.
