Chocolate Mint Dessert Brownies

Decadent brownie with refreshing mint cream and rich chocolate topping.
Ingredients:
  • 1 cup white sugar
  • 0.5 cup butter, softened
  • 4 eggs
  • 1.5 cups chocolate syrup
  • 1 cup all-purpose flour
  • 2 cups confectioners' sugar
  • 2 tablespoons creme de menthe liqueur
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13 inch baking dish.
  • Combine 1 cup of sugar and 1/2 cup of softened butter in a bowl, mix until smooth. Add eggs one at a time, then mix in the chocolate syrup. Gently fold in the flour until just combined. Spread the batter in the pan evenly.
  • Bake in the preheated oven for 25-30 minutes, or until the top bounces back when touched lightly. Allow to cool completely in the pan.
  • In a small bowl, combine confectioners' sugar, 1/2 cup of butter or margarine, and creme de menthe until smooth. Spread the mixture evenly over the cooled brownies and refrigerate until firm.
  • Melt 6 tablespoons of butter and chocolate chips in a small bowl over simmering water or in the microwave until smooth. Let it cool slightly, then spread over the mint layer. Chill for at least 1 hour before cutting into squares.
