Festive mint brownies with a choice of nuts or crushed candy canes. A crowd-pleasing holiday treat that disappears fast!
Ingredients:
  • 1 cup butter, melted
  • 0.5 cup cocoa powder
  • 3 eggs, beaten
  • 1 tablespoon vanilla extract
  • 1 pinch salt
  • 2 cups powdered sugar
  • 0.25 cup melted butter
  • 2.5 tablespoons milk
  • 2 tablespoons mint extract
  • 4 drops green food coloring
  • 1 (12 ounce) bag semisweet chocolate chips
  • 0.33333334326744 cup cream
Instructions:
  • - Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 13x9-inch baking dish.
  • In a large bowl, mix sugar, butter, cocoa powder, and eggs with an electric mixer until well blended. Add flour, vanilla extract, and salt; stir until combined. Transfer the batter to the prepared baking dish.
  • Bake in the oven until the top is dry and the edges begin to pull away from the pan, approximately 25 minutes. Allow to cool for about 20 minutes before serving.
  • Once the brownies have cooled, blend powdered sugar, melted butter, milk, mint extract, and food coloring together using an electric mixer until you achieve a smooth and creamy consistency. Then, generously spread the frosting over the chilled brownies and refrigerate.
  • In a glass bowl, combine chocolate chips and cream over simmering water. Stir occasionally and use a rubber spatula to prevent scorching. Melt the chocolate for approximately 5 minutes. Drizzle over brownies and chill until top layers are set, around 45 minutes.
