Chocolate self-saucing puddings

Indulgent yet healthier chocolate self-saucing pudding made with cacao and yogurt.
Ingredients:
  • 160.00 gm coconut sugar
  • 82.50 ml raw cacao
  • 3/4 Sweet & Creamy Yoghourt, plus extra to serve
  • 33.60 gm coconut oil
  • 1 tsp vanilla bean paste
  • 250.00 gm boiling water
Instructions:
  • Preheat the oven to 180C (160C fan-forced) and grease 4 ramekins with a 1-cup (250ml) capacity.
  • In a large bowl, sift together flour and 1/4 cup cacao. Stir in ¾ cup sugar. In a separate large jug, whisk together yoghurt, oil, egg, and vanilla until combined. Add the wet ingredients to the dry ingredients and stir until well combined. Divide the batter between prepared dishes. In the same jug, whisk together boiling water and remaining sugar and cacao until dissolved. Pour this mixture over the batter. Bake for 18-20 minutes until the top is set.
  • Top with a generous spoonful of additional yoghurt before serving.
