Chocolate-Covered Strawberry Pie

Elevate any occasion with this simple yet stunning strawberry pie. Perfect for holidays or picnics.
Ingredients:
  • 3 ounces semisweet chocolate, chopped, divided
  • 3 tablespoons butter, divided
  • 1 (10 inch) graham cracker pie crust
  • 2 (8 ounce) packages cream cheese, room temperature
  • 1 cup sour cream
  • 0.25 cup white sugar
  • 1 teaspoon vanilla bean paste
  • 1 pound fresh strawberries, sliced
  • 0.25 cup strawberry jam
Instructions:
  • In a microwave-safe bowl, combine 2 ounces of chocolate and 2 tablespoons of butter. Microwave on 30% power for 2 1/2 minutes, stirring occasionally until melted. Spread the mixture over the bottom and up the sides of the pie crust and then transfer the crust to the freezer.
  • Using an electric mixer, whip the cream cheese until smooth. Mix in the sour cream, sugar, and vanilla bean paste. Take the crust out of the freezer and pour in the filling.
  • Mix together fresh ripe strawberries and sweet strawberry jam in a bowl, then gently spread it over the luscious cream cheese layer.
  • In a microwave-safe bowl, combine the remaining chocolate and butter. Microwave until melted, about 1 minute. Use a spoon to drizzle the mixture over the pie. Refrigerate the pie for about 30 minutes before serving.
