Create a stunning Christmas cookie tree using star-shaped cutters for a festive display.
Ingredients:
  • 1 cup white sugar
  • 0.75 cup butter, at room temperature
  • 0.5 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 cups confectioners' sugar
  • 4.5 teaspoons meringue powder
  • 3 tablespoons water
  • 1 tablespoon assorted holiday decorations, such as silver balls, sprinkles, etc.
  • 1 ounce yellow fondant
  • 1 tablespoon confectioners' sugar for dusting
Instructions:
  • In a large bowl, cream together sugar and butter until smooth using an electric mixer. Mix in eggs and vanilla extract. In a separate bowl, combine flour, baking powder, and salt. Stir the flour mixture into the butter mixture until fully combined. Shape the dough into a ball, cover it, and refrigerate for at least 1 hour up to overnight.
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and line 2 cookie sheets with parchment paper.
  • On a lightly floured surface, roll out the dough to 1/4 to 1/2-inch thickness. Use cookie cutters to cut out stars of various sizes. Stack at least 7 or 8 stars to create the height of the Christmas tree. Arrange the cookies 1 inch apart on baking sheets.
  • Bake the cookies in the preheated oven until lightly browned, for 6 to 8 minutes. Carefully transfer the cookies to wire racks and let them cool completely, around 30 minutes.
  • In a bowl, whisk together confectioners' sugar, meringue powder, and water until fluffy peaks form, 7 to 10 minutes using an electric mixer. Transfer the icing to a piping bag fitted with a star-shaped tip.
  • Begin assembling the cookie Christmas tree by stacking stars on a plate with royal icing between each layer, alternating the placement to create a festive design. Decorate with royal icing, silver balls, and other holiday decorations. Finish off with a yellow fondant star on top secured with royal icing, and decorate the remaining cookies as desired.
  • Sprinkle the completed tree with icing sugar.
